Bacon, Potatoe, Onion: Bliss Breakfast

The Germans, in my never humble opinion, have gotten a few things right: pork (although they missed the boat on BBQ), potato worship, and engineering.

Putting our left-over potatoes from last nights salmon, potato-parsley-butter, brussel-sprouts dinner to use… we have one of the best breakfasts and/or side-dishes I know of (just augment with S&P and a cayenne):
